When in Los Cabos, I would say it is a must to go snorkeling. The water is crystal clear and water is just the right temperature. Hearing the water crash on the shore and on to the mountains is such a relaxing sound when paired with the ocean breeze. RMC Events took us out on a yacht to see the shore alongside the beautiful Sea of Cortez, get a breathtaking view of the famous El Arco de Cabo San Lucas, and to snorkel in the clear waters. The arch is home to many sea lions, and we even got see a manatee! Manta rays fly out of the water, and dolphins swim with the wake of the boats. We got swim with so many types of colorful fish when snorkeling – it was a blast! So if you ever find yourself in Cabo, put snorkeling on your list of must-do’s. It is an experience that you will never forget!

Tres Leches

On Wednesday, June 7, Chef Eli Kirshtein led a cooking showcase at El Dorado Resorts in Riviera Maya, Cancun. You may know Chef Kirshtein from season six of Bravo’s television series “Top Chef.” He prepared a creative, three course dinner showcasing different cooking techniques, wine pairings, and tips. He highlighted his gourmet ingredients with premium wines from the Jackson Family wine portfolio. The meal included a spiny lobster paella with saffron and garlic aioli for the first course. The second course was a fully loaded pomme dauphine. To end the night on a strong note, he served a tres leches cake, with whipped dulce and milk crumb. The tres leches cake was his wife’s, Pastry Chef Andrea Kirshtein, recipe. This airy cake recipe, which is not overwhelmingly sweet, is suitable for all types of events!

10 Eggs
448g Sugar
12g Water
330g All-Purpose Flour
6g Baking Powder
1. Preheat oven to 350 degrees F.
2. Whip the eggs and sugar together until light and fluffy.
3. Drizzle in the water.
4. Sift in the dry ingredients.

784 g Condensed Milk
728g Evaporated Milk
448g Heavy Cream
224g Coconut Milk
52g Vanilla
1. Blend all of these ingredients together.

504g Heavy Cream
56g Trimoline
56g Glucose
448g Dulcey
750g Cold Heavy Cream
1. Boil the heavy cream, trimoline, and glucose together.
2. Melt the chocolate. Let cool to room temperature.
3. Use an immersion blender to blend in the cold heavy cream, let it rest overnight.
4. Whip to serve.

325G Milk Powder
175G All-Purpose Flour
100g Corn Starch
150g Sugar
10g Salt
283g Melted Butter
425g Melted Dulce
1. Combine all of the dry ingredients together.
2. Mix in the melted butter.
3. Bake in the oven. Be careful, the milk powder likes to burn.
4. When toasty, fold in the melted dulce and the rest of the milk powder.
5. Chill, then serve.
